武夷山(shān)又(yòu)名虎夷山(shān)。據史傳,唐堯時(shí)有(yǒu)彭祖與二子(zǐ)曰武曰夷,到(dào)該山(s€hān)東(dōng)麓的(de)崇安西(xī)南(nán)鄉(xiāng)隐居,因當地(dì)洪水(shuǐ)常泛濫成災,彭武與彭夷兩兄α弟(dì)便開(kāi)山(shān)鑿石,挖河(hé)渠疏導洪水(shuǐ)。當時(shí)人(rén)們為(wèi)了(le)¶紀念他(tā)們,就(jiù)把他(tā)倆開(kāi)挖河(hé)道(dào)時(shí)堆壘的(de)小(xiǎo)土(tǔ)石山(shān)稱為(wèi)“武夷山(shān)”。後來(lái),雄峙贛閩邊界的(de)大(dà)山(shān)也(yě)統稱為(wèi)武夷山(shān)。

在地(dì)理(lǐ)上(shàng),武夷山(shān)脈呈東(dōng)北(běi)—西(xī)南(nán)走向,綿延與閩、浙、贛Ω邊界,長(cháng)約500多(duō)公裡(lǐ),将閩北(běi)大(dà)部分(fēn)地(dì)區(qū)天然地(dì)帶阻隔開(kāi)來β(lái)。僅就(jiù)福建來(lái)講,山(shān)脈覆蓋面積超過半個(gè)閩北(běi),最 南(nán)端在閩西(xī)武平縣的(de)梁野山(shān)結束。丘陵起伏,河(hé)谷盆地(dì )錯(cuò)落其間(jiān),在一(yī)定程度上(shàng)将武夷山(shān)脈的(de)地(dì)理(lǐ)進行(xíng)分(fēn)割。于是(s✘hì),武夷山(shān)地(dì)區(qū)在氣候、地(dì)貌、山(shān)系上(shàng)都(dōu)自(zì)成單元,形成多(duō)個(gè)自(zì)成體(tǐ)系的(de )自(zì)然與社會(huì)經濟區(qū)域。

As far as Fujian is concernγed, the mountains cover more than half of Northern Fujian, and the southernmost end is li¥angye mountain in Wuping County, Western Fujian. Rolling hills and scattered river valley♣s and basins divide the geography of Wuyi Mountains to a certain extent. Now, the most important tea making technolog↕y of "Wuyi rock tea", which is well-known, is "φ;charcoal baking" in addition to the basic tea making process.

炭焙,顧名思義,指利用(yòng)上(shàng)等好(hǎo)炭的(de)餘火(huǒ)持續焙茶。炭焙時(shí),焙籠中的(de)溫度約在120攝氏度左右。一(yī)©戶茶農(nóng)家(jiā)裡(lǐ),沿用(yòng)傳統炭焙工(gōng)藝的(de)話(huà),平均一(yī)天隻能(néng)焙上(shàng)幾十斤的(de)茶葉,隻是(✘shì)我們相(xiàng)信,“文(wén)火(huǒ)慢(màn)炖”才有(yǒu)可(kě)能(néng)出好(hǎo)茶。
Charcoal baking, as the name suggests, refers to the continuous baking of tea by using the af♥terheat of superior charcoal. When baking with charcoal, the temperature in the baking cage is about 120 ℃. 走訪途中我們發現(xiàn):茶山(shān)生(shēng)态優良,但(dàn)人(rén)煙(yān)旱至。歸根結底←是(shì)由于全球茶葉供大(dà)于求,産能(néng)過剩;加之子(zǐ)女(nǚ)教育問(wèn)題,茶$農(nóng)放(fàng)棄農(nóng)村(cūn),從(cóng)而導緻年(nián)輕勞動力喪失,農(nóng)村(cūn)老(lǎo)齡化(huà)加劇(jù),目前茶農(nóngα)的(de)平均年(nián)齡已超過50歲。這(zhè)也(yě)使得(de)傳統工(gōng)藝制(zhì)茶中美(měi)麗(lì)的(de₹)田園景色、生(shēng)态條件(jiàn)、可(kě)持續的(de)土(tǔ)壤,都(dōu)無法在中國(gu★ó)茶的(de)生(shēng)産價值體(tǐ)系中體(tǐ)現(xiàn),同時(shí)制(zhì)茶師(shī)傅面對(duì)好(hǎo)茶青的(de)巧手匠(ji✘àng)心也(yě)将被埋藏在涓涓的(de)文(wén)明(míng)長(cháng)河(hé)中。

傳統手工(gōng)制(zhì)茶的(de)師(shī)傅是(shì)最能(néng)知(zhī)道(dào)清早上(shàng)山(shān)采青茶工(gōng)的(de)艱辛,知(☆zhī)道(dào)一(yī)次難得(de)的(de)晴天對(duì)茶青的(de)難得(de),明(míng)白(bái)一(yī)頓漫射∞光(guāng)滋養的(de)意義。于是(shì),粗厚的(de)手掌躍躍欲試的(de)開(kāi)始搓起來(lái),搖青、靜(jìng)置、再搖青,大(dà)約>循環數(shù)十次,少(shǎo)則五、六小(xiǎo)時(shí),多(duō)則數(shù)十小(xiǎo)時(shí)有(yǒu)餘,其間(jiān)還(h∞ái)需觀茶葉情況,不(bù)得(de)有(yǒu)半點馬虎。而後,炒青、揉撚、幹燥,直至天亮(liàng),茶初成。身(shēn)處現(xiàn)場(chǎng∑)的(de)我們對(duì)師(shī)傅的(de)辛勤産生(shēng)驚歎,更加折服于師(shī)傅的(de)嚴謹。
